Jeremy loooooves cornflake cookies. For his birthday one time i made this recipe into one MASSIVE cornflake cookie. It was awesome.

Ingredients
  • 170g butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 2 1/4 cups plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup sultanas
  • 1/8 cup milk
  • 1 handful cornflakes
  • 4 handfuls cornflakes, extra, kinda crushed

Directions
  1. Cream butter and sugar in a large bowel till fluffy. Add eggs and vanilla, mix well.
  2. In another bowl, combine flour, baking powder, salt, sultanas and one handful of the cornflakes.
  3. Add butter mixture to flour mixture. Add milk to form cookie dough.
  4. Preheat the oven to 190.
  5. Shape dough into balls, slightly flatten and press into the crushed cornflakes (or make ONE MASSIVE COOKIE; see picture).
  6. Bake for 15 minutes or until browned.
