Ingredients
  • 500g Penne or other pasta
  • 2 diced onions
  • 4 whole artichokes (fresh or preserved)
  • 2 continental sausages
  • 1 sliced chili
  • 2 tbspns olive oil
  • 1/4 cup white wine
  • 1/2 cup chicken stock
  • 2 cloves garlic, diced
  • salt and pepper
  • 1/4 cup continental parsley
  • parmesan cheese

Directions
  1. Prepare fresh artichoek by peeling away outer leaves, keeping inner hearts.
  2. Blanch by putting in boiling wtare until tender (20mins)
  3. Remove from water, cool and quarter
  4. Or, open the artichoke jar/can.
  5. Suate onions, garlic and chili 5mins.
  6. Remove sausage meat from skins and add to apn- saute til golden brown.
  7. Add white wine, artichokes and chicken stock. Simmer 10 mins.
  8. Meanwhile, cook pasta in plenty of salted boiling water until al dente-12 mins or so.
  9. Strain and toss through sauce.
  10. Serve with parsley and cheese.....
