How to make it

  • Prepare fresh artichoek by peeling away outer leaves, keeping inner hearts.
  • Blanch by putting in boiling wtare until tender (20mins)
  • Remove from water, cool and quarter
  • Or, open the artichoke jar/can.
  • Suate onions, garlic and chili 5mins.
  • Remove sausage meat from skins and add to apn- saute til golden brown.
  • Add white wine, artichokes and chicken stock. Simmer 10 mins.
  • Meanwhile, cook pasta in plenty of salted boiling water until al dente-12 mins or so.
  • Strain and toss through sauce.
  • Serve with parsley and cheese.....
