Chicken And Dumplings

- 1 1/2 pounds of chicken breast, diced in bite size pieces shopping list
- 1 Tbl olive oil shopping list
- 2 tbl butter shopping list
- 2 potatoes, peeled & diced shopping list
- 2 med carrots, peeled & diced shopping list
- 1 med onion shopping list
- 1 rib celery, diced shopping list
- 1 bay leaf fresh or dried shopping list
- salt & pepper shopping list
- 1 teasp poulrty seasoning shopping list
- 2 tbl flour shopping list
- 1 quart of chicken broth shopping list
- 1 small box jiffy biscuit mix shopping list
- 1/2 cup warm water shopping list
- parsley, chopped shopping list
- 1 cup frozen peas shopping list
How to make it
- In a large pot over med heat add oil, butter, vegetables and bay leaf and cook for 5 minutes stiring frequently. Season mixture with salt, pepper & poultry seasoning. Add flour to the pot and cook for 2 min. Stir broth to the pot and bring to a boil. Add chicken & stir.
- Place biscuit mix in a bowl. Combine with 1/2 cup warm water & parsley. Drop tablespoons of mix in pot, spacing dumplings evenly. Cover pot tightly & reduce heat to med low. Steam dumpling 8-10 minutes. Remove cover and stir chicken & dumplings to thicken sauce a bit. Stir in peas and remove from heat.
