Chicken And Dumplings Recipe
This is a great comforting meal to make on a rainy or cold day. My family loves this!

Ingredients
  • 1 1/2 pounds of chicken breast, diced in bite size pieces
  • 1 Tbl olive oil
  • 2 tbl butter
  • 2 potatoes, peeled & diced
  • 2 med carrots, peeled & diced
  • 1 med onion
  • 1 rib celery, diced
  • 1 bay leaf fresh or dried
  • salt & pepper
  • 1 teasp poulrty seasoning
  • 2 tbl flour
  • 1 quart of chicken broth
  • 1 small box jiffy biscuit mix
  • 1/2 cup warm water
  • parsley, chopped
  • 1 cup frozen peas

Directions
  1. In a large pot over med heat add oil, butter, vegetables and bay leaf and cook for 5 minutes stiring frequently. Season mixture with salt, pepper & poultry seasoning. Add flour to the pot and cook for 2 min. Stir broth to the pot and bring to a boil. Add chicken & stir.
  2. Place biscuit mix in a bowl. Combine with 1/2 cup warm water & parsley. Drop tablespoons of mix in pot, spacing dumplings evenly. Cover pot tightly & reduce heat to med low. Steam dumpling 8-10 minutes. Remove cover and stir chicken & dumplings to thicken sauce a bit. Stir in peas and remove from heat.
