How to make it

  • cook for 2 hours....the 2 hour stage is critical to long and the meat will fall off the bone, to soon and the rib will be tough
  • after 2 hours
  • unwrap the ribs . this stage is to firm them up and baste them
  • mop them with your fav. mop sauce for 1 hour
  • take them off the grill and let them set up for 5 to 10 minutes
  • then eat them up

    This is a much sought after Secret Rib Recipe and is used by many Master Rib Smokers at National BBQ Contests .
    You have the recipe right except the wrap part is a bit long, I use 1 to 1 1/2 hour max for the wrap.
