Ingredients
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 skinned chicken breast
  • 1 1/2 cups buttermilk
  • 1/2 cup dry breadcrumbs
  • 1/2 cup yellow cornmeal

Directions
  1. Combine first 7 ingredients in a small bowl; stir well.
  2. Rub chicken with 3 tablespoons spice mixture; set remaining spice mixture aside.
  3. Place chicken in a baking dish; let stand for 10 minutes.
  4. Pour buttermilk over chicken, turning to coat.
  5. Cover and marinate in refridgerator 2 hours, turning chicken occasionally.
  6. Remove chicken from dish; discard buttermilk.
  7. Preheat oven to 400 degrees.
  8. Combine remaining spice mixture, breadcrumbs, and cornmeal in a shallow dish; stir well.
  9. Dredge chicken in breadcrumb mixture, and place on a baking sheet coated with cooking spray.
  10. Bake for 20 minutes then lightly spray chicken with cooking spray and bake an additional 20 minutes... do not turn chicken..
