Cheesy Scalloped Carrots Recipe
A wonderful cheesy casserole that my mother makes for the holidays, even people that don't care for carrots love this dish.

Ingredients
  • 12 medium carrots sliced
  • 1 small onion diced
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 t salt
  • 1/4 t dry mustard
  • 2 cups milk
  • 1/8 t pepper
  • 1/4 t celery salt
  • 1/2 lb. chedder cheese shredded
  • 3 cups buttered fresh bread crumbs

Directions
  1. early in the day cook carrots in boiling salted water, covered until barely tender. drain
  2. Meanwhile in saucepan gently cook onion in butter for 2-3 minutes.
  3. Stir in flour, salt, mustard, and milk.
  4. Cook, stirring until smooth.
  5. Add pepper and celery salt.
  6. In 2 Qt. casserole, arrange 1/3 of the carrots, 1/2 of the cheese and repeat with a second layer of carrots and the rest of the cheese.
  7. End with last 1/3 of carrots
  8. pour sauce slowly over caserole
  9. top with buttered bread crumbs. Refrigerate until ready to bake. 45 minutes before serving bake at 350 degrees for 40 minutes
