GRATED ZUCCHINI AND YELLOW SQUASH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitcomb Estate in Richardson Texas in 1994.

Ingredients
  • 2 teaspoons butter
  • 2 small zucchini grated
  • 2 medium yellow squash grated
  • 1/2 teaspoon salt
  • 1 teaspoon
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons freshly grated parmesan cheese

Directions
  1. In a large skillet over medium heat melt butter.
  2. Add squash and sauté stirring frequently for 3 minutes then season with salt and pepper.
  3. Sprinkle with parmesan right before serving.
