Grilled Japanese Eggplant

- 2 pounds Japanese eggplant shopping list
- 2 tablespoons olive oil shopping list
- 1 teaspoon minced garlic shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Wash eggplant and pat dry then lightly coat with olive oil, garlic, salt and pepper.
- Prepare a charcoal fire then place eggplant on grill over direct heat and cover with lid.
- Turn several times during cooking which should take approximately 5 minutes.
