Roasted Onions With Balsamic Vinegar Recipe
ROASTED ONIONS WITH BALSAMIC VINEGAR This recipe came from an estate sale. I obtained it when I purchased the family collection from the Whitcomb Estate in Richardson Texas in 1994.

Ingredients
  • 3 red onions
  • 1 clove garlic minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper

Directions
  1. Leaving root end attached slice onions in half lengthwise then peel papery skin off.
  2. In a rectangular baking pan mix garlic with 2 tablespoons vinegar, oil, salt and pepper.
  3. Add onions then toss marinade with onions and allow to sit for 1 hour.
  4. Preheat oven to 350 then bake onions in marinade for 1-1/4 hours.
  5. Remove from oven to a serving dish and sprinkle with remaining vinegar.
