Parslied Potatoes

- 1 1/2 pounds small new potatoes, scrubbed shopping list
- 1 tablespoon vegetable oil shopping list
- 1 medium onion, chopped shopping list
- 1 small garlic clove, crushed shopping list
- 1 cup chicken broth shopping list
- 1 cup chopped fresh parsley, divided shopping list
- 1/2 teaspoon pepper shopping list
How to make it
- Peel strip of skin around the middle of each potato.
- Place potatoes in cold water.
- Set aside.
- Heat a large skillet over medium-high heat; add oil.
- Saute onion and garlic for 5 minutes or until tender.
- Add broth and 3/4 cup parsley: mix well.
- Bring to boil.
- Place potatoes in a single in the skillet.
- Return to boil; reduce heat.
- Simmer, covered, for ten minutes or until potatoes are tender.
- Remove potatoes with slotted spoon to serving bowl.
- Add pepper to skillet: stir.
- Pour sauce over potatoes.
- Sprinkle with remainin parsley.
