Cantaloupe with Blackberry Gele

- 1 1/4 oz. envelope unflavored gelatin shopping list
- 1-1/4 cups cold water shopping list
- 6-7 sprigs fresh mint and some for garnish shopping list
- 3/4 cup blackberry liqueur shopping list
- 1 cantaloupe, scooped into balls and divided into four parfait glasses shopping list
- Red & blue food coloring, optional. shopping list
How to make it
- Sprinkle gelatin over water in a shallow bowl that can withstand heat. Let stand about 5 minutes then set bowl over a pan of simmering water for about 3 minutes to dissolve gelatin.
- Add mint and set aside for 12 minutes.
- Remove mint, squeezing out excess liquid.
- Add liqueur (plus 1 drop blue and 2 drops red food coloring, if desired for presentation) and stir.
- Pour into an 8 inch square glass baking dish.
- Put in freezer for 30 minutes +/- to set.
- Store in refrigerator at least 15 minutes - more if needed.
- Spoon the gelée over the melon balls garnish with reserved mint leaves and serve.

Wonderful..I'm on a fruit and veggie fast and I think I can have this! So it has a little gelatin in it....that's not cheating, is it? LOL
