Pan Seared Basa Recipe
This dish is light and spicy. This is a farm raised rice fed fish.Goes well with rice and simple vegetables. My favorite right now is fresh heirlooms with chopped garlic, salt and pepper with a dash of truffle oil.

Ingredients
  • 2 tbs olive oil or genourous amount
  • 1 tsp Sea salt
  • 1 tsp of garlic powder
  • 1 tsp cracker pepper
  • 1tsp of cajun spice
  • 1/2 tsp of cayenne
  • 1/2 tsp of paprika (smoked)
  • 2 basa filets

Directions
  1. thaw and dry off filets
  2. dry rub one side of filets with salt, pepper, cajun spice. garlic powder, and smoked paprika
  3. place spiced side down onto pan
  4. follow step number 2 for alternate side.
  5. cook about 3-5 minutes on each side depending on thickness of fish
  6. lightly dust with cayenne before serving. ( do not want to cook cayenne in hot oil, may need a gas mask! )
  7. enjoy!
