Ingredients
- 6 tbls. butter shopping list
- 1/2 cup sugar shopping list
- 1/2 cup light corn syrup shopping list
- 1/2 of a 14 oz. can of sweetened condensed milk shopping list
- 1/2 tsp. vanilla shopping list
- 4 cups coconut, toasted shopping list
- 1 cup milk or semi sweet chocolate chips shopping list
How to make it
- Add butter, sugar, and corn syrup to saucepan
- Heat to full boil stirring constantly with wooden spoon
- Boil for 3 minutes stirring all the while
- Stir in condensed milk slowly
- Cook over low heat until candy thermometer reaches 220-228
- Remove from heat
- Stir in vanilla
- Beat until creamy
- Stir in coconut and mix well
- Spoon mixture by spoonfuls in a circular motion onto buttered parchment paper
- Flatten slightly with the end of wooden spoon
- Poke hole in the middle with end of spoon
- Melt chocolate and drizzle over top of cookie
- Cool completely
