How to make it

  • Add butter, sugar, and corn syrup to saucepan
  • Heat to full boil stirring constantly with wooden spoon
  • Boil for 3 minutes stirring all the while
  • Stir in condensed milk slowly
  • Cook over low heat until candy thermometer reaches 220-228
  • Remove from heat
  • Stir in vanilla
  • Beat until creamy
  • Stir in coconut and mix well
  • Spoon mixture by spoonfuls in a circular motion onto buttered parchment paper
  • Flatten slightly with the end of wooden spoon
  • Poke hole in the middle with end of spoon
  • Melt chocolate and drizzle over top of cookie
  • Cool completely
