How to make it

  • Cream butter and sugar together.
  • Add eggs.
  • Sift flour, salt, and baking powder together.
  • Add to creamed mixture.
  • Add milk, vanilla and floured rhubarb (chopped rhubarb tossed with about ¼ c. flour).
  • Mix sugar with cinnamon and sprinkle on top of batter before baking.
  • Bake at 300° for 1 hour or until done.
  • (Note: If using frozen rhubarb do not thaw before use.)
