Rhubarb Coffee Cake Recipe
This is a yummy coffee cake . Very moist and flavorful. Serve for a special breakfast or just a dessert after dinner.

Ingredients
  • Cake:
  • 2 eggs
  • 1 ½ c. sugar
  • ½ c. butter
  • ½ c. milk
  • 1 t. vanilla
  • ½ t. baking powder
  • 1 ½ c. flour (or more)
  • ½ t. salt
  • 2 c. rhubarb
  • Topping:
  • ¼ c. sugar
  • 1 t. cinnamon

Directions
  1. Cream butter and sugar together.
  2. Add eggs.
  3. Sift flour, salt, and baking powder together.
  4. Add to creamed mixture.
  5. Add milk, vanilla and floured rhubarb (chopped rhubarb tossed with about ¼ c. flour).
  6. Mix sugar with cinnamon and sprinkle on top of batter before baking.
  7. Bake at 300° for 1 hour or until done.
  8. (Note: If using frozen rhubarb do not thaw before use.)
