Rhubarb Coffee Cake

- Cake: shopping list
- 2 eggs shopping list
- 1 ½ c. sugar shopping list
- ½ c. butter shopping list
- ½ c. milk shopping list
- 1 t. vanilla shopping list
- ½ t. baking powder shopping list
- 1 ½ c. flour (or more) shopping list
- ½ t. salt shopping list
- 2 c. rhubarb shopping list
- Topping: shopping list
- ¼ c. sugar shopping list
- 1 t. cinnamon shopping list
How to make it
- Cream butter and sugar together.
- Add eggs.
- Sift flour, salt, and baking powder together.
- Add to creamed mixture.
- Add milk, vanilla and floured rhubarb (chopped rhubarb tossed with about ¼ c. flour).
- Mix sugar with cinnamon and sprinkle on top of batter before baking.
- Bake at 300° for 1 hour or until done.
- (Note: If using frozen rhubarb do not thaw before use.)
