Ingredients
  • 12 oz turkey breast or thigh cubed
  • 1/4 cup flour
  • 1/4 tsp thyme
  • 1/4 tsp seasoned pepper
  • 1/4 tsp oregano
  • 1/4 tsp rosemary
  • 1-2 cloves minced garlic
  • 2 TBS minced onion
  • 1/4 cup minced mushroom
  • 1 1/2 Cup chicken stock or bouillon
  • 3 TBS olive oil
  • 3 TBS butter
  • 2 tsp flour
  • ____________________________________
  • 1 Cup Corn meal
  • 2 cups water
  • 1/2 tsp salt

Directions
  1. Mix flour, thyme, seasoned pepper, rosemary, and oregano in a plastic bag.
  2. Add cubed chicken and shake to coat.
  3. Fry turkey in oil and butter until done about 10 min.
  4. Remove to a paper towel to drain, keep warm
  5. Add to pan drippings 1/2 cup of chicken stock, minced onion, garlic, and mushroom cook until tender and the onion is translucent.
  6. mix 2 tsp to the remaining chicken stock and mix until dissolved.
  7. Add to pan drippings stir until thickened

  9. 1tsp salt
  10. 2 Cups Water
  11. 2 Cups corn meal
  12. 4 Cups Water in pan
  13. 2 TBS butter
  14. Bring 4 Cups of water to boil in pan
  15. add corn meal to 2 Cups of cold water
  16. Add the polenta and water to the boiling water
  17. Turn down and simmer cook for 20-30 minutes.
  18. Serve by putting your polenta on a plate, top with the turkey and put the sauce on top.

Great story and pic's! I don't think I have ever seen A.S. looking better! Didn't I see you in the red jacket yesterday? But, seriously, this is a great recipe. The sauce is what really sets everything off to perfection. It is yu um mmy!

There is more than one kind of polenta and the one we use in central Italy is just like corn meal. We cook it longer, however, about 30 minutes. It fluffs up when you cook it longer and is wonderful.
Never, ever use that pre-made stuff. It is terrible!
