Corn Casserole Recipe
Always a hit at holiday suppers. Can be prepared ahead of time and refridgerated, then just heat and serve!

Ingredients
  • 2 1/2 cups cream corn (2 cans)
  • 3/4 cup evaporated milk
  • 1 beaten egg
  • 1/3 cup finely diced onion
  • 2 cups fine cracker crumbs (I use whatever I have and mix them up)
  • 1/2 cup butter
  • salt and pepper to taste
  • paprika (optional)

Directions
  1. heat corn and milk
  2. stir in egg, onions,salt, pepper and 1 cup cracker crumbs
  3. heat and stir untill mixed well
  4. pour into buttered casserol dish
  5. melt butter and mix with remaining cracker crumbs, place on top, sprinkle with paprika
  6. heat at 400* for 30 min or untill knife comes out clean

Wow. I haven't had this one in eons. One of our relatives shared this recipe with my mother when I was a child. I'll not date it but suffice to say you just brought memories of a lovely family time back from years long forgotten.


It is a recipie from my grandmother that has been passed on to me, I always loved it when she made it and now I make it for my family!
