Peaches And Cream Corn Chowder Recipe
A variation of the traditional favorite, this corn chowder is low in fat and salt and ready in minutes for a hearty winter supper. Serve with thick slices of French bread or whole wheat bread

Ingredients
  • 2 cups unsalted chicken broth or water
  • 1 medium onion, finely chopped
  • 2 cups potatoes, peeled and diced
  • 1 large carrot, peeled and grated
  • 3 cups Peaches and Cream frozen corn (or your favorite variety)
  • 2 cups 2% milk (or 2% condensed milk, or 1 cup of each)
  • 1 tsp salt, or to taste
  • 1/4 tsp pepper, or to taste
  • 1/2 cup Old cheddar cheese, grated
  • 2 Tbsp fresh parsley, chopped

Directions
  1. Pour chicken broth or water into a large saucepan and bring to a boil.
  2. Add onion, potatoes and carrot and return to boil.
  3. Reduce heat and simmer covered for 8 minutes.
  4. Add corn, return to boil and simmer covered for 5 minutes.
  5. Add milk, salt, pepper; heat to nearly boiling.
  6. Ladle soup into serving bowls; top each bowl with grated cheese and parsley.
  7. Serve at once.
