Sweet Potato And Turkey Hash Recipe
Fiber rich sweet potatoes paired with bright bell pepper and garden fresh scallions make a healthy hash that's terrific with scrambled or poached eggs

Ingredients
  • 2 tsp extra virgin olive oil
  • 1 small sweet potatoe, peeled and finely chopped
  • 1 small red bell pepper, finely chopped
  • 2 scallions thinly sliced (or green onions)
  • 2 Tbsp water
  • 1/4 tsp salt
  • freshly ground pepper to taste
  • 1/8 tsp dried thyme
  • 1/2 pound cooked skinless roast turkey breast cut into 1/4 inch cubes
  • 2 Tbsp reduced fat sour cream

Directions
  1. In a large nonstick skillet, heat oil over medium heat.
  2. Add sweet potato and cook, stirring occasionally until lightly browned and beginning to soften (about 5 mins).
  3. Add bell pepper, scallions, water, salt, pepper and thyme.
  4. Cook until heated through, about 2 mins. Remove from heat and stir in sour cream. Serve warm
