How to make it

  • Beat eggs at high speed with electric mixer for 5 mins.
  • Gradually beat in sugar, pumpkin, and lemon juice.
  • Sift together flour, baking powder, cinnamon, ginger, nutmeg and salt.
  • Add to other mixture and stir until evenly combined.
  • Spread batter in greasted and parchment lined OR floured 10 x 15 inch jelly roll pan.
  • Sprinkle with nuts.
  • Bake in preheated 375 degree oven for 15 minutes or until cake is done.
  • Turn out immediately onto towel sprinkled with powdered sugar.
  • Starting at narrow end, roll towel and cake together. Cool thoroughly.
  • Beat together cream cheese and margarine or butter. Add icing sugar and vanilla.
  • Beat until smooth.
  • Unroll cake.
  • Spread filling mixture on inside of cake roll. Reroll cake.
  • Sprinkle with icing sugar . Cover and chill thoroughly. Store in refrigerator. Freezes well.
