Pumpkin Jelly Roll

- 3 eggs shopping list
- 1 cup sugar shopping list
- 2/3 cup cooked pumpkin shopping list
- 1 tsp lemon juice shopping list
- 3/4 cup flour shopping list
- 1 tsp baking powder shopping list
- 2 tsp cinnamon shopping list
- 1 tsp ginger shopping list
- 1/2 tsp nutmeg shopping list
- 1/2 tsp salt shopping list
- 1 cup chopped pecans shopping list
- Filling: shopping list
- 2 - 3oz pkgs cream cheese softened shopping list
- 1/4 cup margarine or butter softened shopping list
- 1 cup icing sugar shopping list
- 1/2 tsp vanilla shopping list
How to make it
- Beat eggs at high speed with electric mixer for 5 mins.
- Gradually beat in sugar, pumpkin, and lemon juice.
- Sift together flour, baking powder, cinnamon, ginger, nutmeg and salt.
- Add to other mixture and stir until evenly combined.
- Spread batter in greasted and parchment lined OR floured 10 x 15 inch jelly roll pan.
- Sprinkle with nuts.
- Bake in preheated 375 degree oven for 15 minutes or until cake is done.
- Turn out immediately onto towel sprinkled with powdered sugar.
- Starting at narrow end, roll towel and cake together. Cool thoroughly.
- Beat together cream cheese and margarine or butter. Add icing sugar and vanilla.
- Beat until smooth.
- Unroll cake.
- Spread filling mixture on inside of cake roll. Reroll cake.
- Sprinkle with icing sugar . Cover and chill thoroughly. Store in refrigerator. Freezes well.
