This Pumpkin Jelly roll is an elegant dessert which you'll be proud to serve. The filling is a modification of the old standby cream cheese frosting recipe. You won't be able to stop at just one slice!

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup cooked pumpkin
  • 1 tsp lemon juice
  • 3/4 cup flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • Filling:
  • 2 - 3oz pkgs cream cheese softened
  • 1/4 cup margarine or butter softened
  • 1 cup icing sugar
  • 1/2 tsp vanilla

Directions
  1. Beat eggs at high speed with electric mixer for 5 mins.
  2. Gradually beat in sugar, pumpkin, and lemon juice.
  3. Sift together flour, baking powder, cinnamon, ginger, nutmeg and salt.
  4. Add to other mixture and stir until evenly combined.
  5. Spread batter in greasted and parchment lined OR floured 10 x 15 inch jelly roll pan.
  6. Sprinkle with nuts.
  7. Bake in preheated 375 degree oven for 15 minutes or until cake is done.
  8. Turn out immediately onto towel sprinkled with powdered sugar.
  9. Starting at narrow end, roll towel and cake together. Cool thoroughly.
  10. Beat together cream cheese and margarine or butter. Add icing sugar and vanilla.
  11. Beat until smooth.
  12. Unroll cake.
  13. Spread filling mixture on inside of cake roll. Reroll cake.
  14. Sprinkle with icing sugar . Cover and chill thoroughly. Store in refrigerator. Freezes well.
