Artichoke Frittata Recipe
My family has been making this for over thirty years. It comes from an older sister's fourth grade class cookbook. I use fresh bread crumbs that are not very fine.

Ingredients
  • 2 - 6 oz. jars of marinated artichokes hearts, chopped-reserve liquid from one jar
  • 1/2 pound grated cheddar cheese
  • 1/4 cup fresh bread crumbs.
  • 4 eggs
  • 1 tsp each of oregano, Tabasco and ground black pepper
  • 1 small onion
  • 1 clove of garlic-minced
  • 2 Tbsp. minced fresh parsley

Directions
  1. Sauté garlic and onion in reserved liquid.
  2. Whisk eggs in a bowl and then combine all other ingredients, including onions and garlic.
  3. Bake in greased 11x9 pan at 350* for 30 minutes.
  4. This can be served warm or at room temperature. Easily doubled and baked in a 9 x 13 pan.
