Baked Halibut With Coconut And Cashews Recipe
This is a very moist and flaky fish packed full of wonderful flavors.

Ingredients
  • 1 pound halibut fillets finely chopped
  • 1/3 cup vegetable oil
  • 1 cup grated fresh coconut
  • 1 large white onion finely chopped
  • 2 garlic cloves finely chopped
  • 2 canned mild green chilies chopped
  • 1/2 teaspoon salt
  • 1 teaspoon curry powder
  • 2 tablespoons unsalted cashews chopped
  • 1 tablespoon lemon juice
  • 2 eggs lightly beaten

Directions
  1. Sauté coconut in 1 tablespoon oil until lightly browned.
  2. Sauté onion in remaining oil until tender but not browned.
  3. Add garlic, chilies, salt and curry powder and cook stirring, 2 minutes.
  4. Add coconut, nuts and halibut and cook 2 minutes.
  5. Cool slightly.
  6. Mix lemon juice with eggs and add to skillet.
  7. Divide halibut mixture among 6 oiled squares of aluminum foil.
  8. Wrap tightly and place on a baking sheet and bake at 375 for 20 minutes.
