Baked Halibut with Coconut and Cashews

- 1 pound halibut fillets finely chopped shopping list
- 1/3 cup vegetable oil shopping list
- 1 cup grated fresh coconut shopping list
- 1 large white onion finely chopped shopping list
- 2 garlic cloves finely chopped shopping list
- 2 canned mild green chilies chopped shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon curry powder shopping list
- 2 tablespoons unsalted cashews chopped shopping list
- 1 tablespoon lemon juice shopping list
- 2 eggs lightly beaten shopping list
How to make it
- Sauté coconut in 1 tablespoon oil until lightly browned.
- Sauté onion in remaining oil until tender but not browned.
- Add garlic, chilies, salt and curry powder and cook stirring, 2 minutes.
- Add coconut, nuts and halibut and cook 2 minutes.
- Cool slightly.
- Mix lemon juice with eggs and add to skillet.
- Divide halibut mixture among 6 oiled squares of aluminum foil.
- Wrap tightly and place on a baking sheet and bake at 375 for 20 minutes.
