Citrus Tarragon Shrimp

- 4 Tablespoons extra virgin olive oil shopping list
- 1 teaspoon dried tarragon shopping list
- 1 pound large shrimp, shelled and deveined shopping list
- Zest of one oranged, finely minced shopping list
- 1/2 cup freshly squeezed orange juice shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 400 degrees. Place 3 tablespoons of the olive oil in the bottom of a shallow baking pan and sprinkle with the tarragon. Place pan in oven just until tarragon begins to sizzle.
- Meanwhile mix 1 tablespoon olive oil, orange zest and orange juice in a small bowl; set aside.
- Remove pan from oven. Add shrimp and pour orange juice mixture over shrimp. Stir gently. Sprinkle with salt and pepper to taste.
- Return pan to oven and cook for 5-9 minutes; just until shrimp begin to turn pink/coral. Do Not Overcook! Serve in a shallow dish with lots of crusty bread to soak up juices.
