Ingredients
  • 3 tablespoons butter
  • 1 cup frozen chopped onions thawed and drained
  • 3 garlic cloves minced
  • 3 tablespoons all purpose flour
  • 1-1/2 teaspoons dry mustard
  • 2 cups milk
  • 1 cup shredded Swiss cheese
  • 10 ounces frozen chopped spinach thawed and drained
  • 1 teaspoon freshly ground black pepper
  • 20 ounces refrigerated shredded potatoes
  • 1 pound baked or boiled ham cut into cubes

Directions
  1. Preheat oven to 375.
  2. Melt butter in a medium saucepan over moderate heat.
  3. Add onions and sauté stirring occasionally for 3 minutes.
  4. Add garlic and sauté stirring occasionally for 3 minutes more.
  5. Blend in the flour and mustard then gradually whisk in the milk.
  6. Cook stirring constantly until thickened and smooth.
  7. Add cheese and stir until melted.
  8. Remove from heat and mix in the spinach and pepper.
  9. Arrange half the potatoes in a lightly greased baking dish then pour on half the spinach mixture and scatter ham on top.
  10. Top with the remaining potatoes and spinach mixture.
  11. Cover with foil and set on a baking sheet then bake for 30 minutes.
  12. Remove foil and bake 15 minutes longer.
