MARIES APPLE CAKE

A co-worker shared this delicious apple cake recipe with me many years ago. It is very quick to prepare and just right for the autumn season!

Preheat oven to 325. Spray non-stick spray into a 9 inch round cake pan.
Peel and slice apples. Toss slices with 1/4 cup sugar and the 1 teaspoon cinnamon.
In a separate bowl, mix flour and baking powder. Set aside
In a large bowl, mix remaining 1/2 cup sugar and egg. Add melted butter, vaniilla and flour mix.
Stir until well blended.
Pour 1/2 of the cake batter into the prepared pan.
Arrange apples in a circular pattern on top of batter in pan.
Pour remaining batter on top of apples.
Sprinkle with a bit of cinnamon.
Bake at 325 for 40-45 minutes.
