spicy peanut soup

- 2 tbsp oil shopping list
- 1 large onion, finely chopped shopping list
- 2 garlic cloves, crushed shopping list
- 1tsp chilli powder shopping list
- 2 red bell peppers, de-seeded and finely chopped shopping list
- 225g – 8oz carrots, finely chopped shopping list
- 225g – 8oz potatoes, cubed (I very rarely peel potatoes) shopping list
- 3 sticks celery, sliced shopping list
- 1 ½ pints veg stock shopping list
- 6 tbsp crunchy peanut butter shopping list
- 2/3 cup corn shopping list
- salt and ground pepper to taste shopping list
- roughly chopped roasted peanuts to garnish shopping list
How to make it
- heat oil and brown onion and garlic
- add chili powder, cook for further min.
- add vegetables and cook for a further 4 min.
- stir in stock and peanut butter
- season
- bring to the boil
- cover and simmer for 20 min.
- check seasoning and serve
- sprinkle with roast peanuts
