Pasta With Lobster Astako Makaronada

- 1 1/2 kg lobster(s). shopping list
- 2/3 c olive oil. shopping list
- 800 gr spagetti or any other pasta you like. shopping list
- salt, pepper, water. shopping list
- 3 bay leaves. shopping list
- 2 c cherry tomatoes chopped. shopping list
- 1 tbs tomato paste. shopping list
- 1/2 c cognac or brandy. shopping list
- 1 tbs basilicum leaves or 1 tbs dried. shopping list
- 2 tbs parsley chopped shopping list
- 2 medium onions chopped. shopping list
- 2 cloves garlic chopped. shopping list
- 1 c whine vinegar. shopping list
- 2 tbs celery leaves chopped. shopping list
- 1 small carot chopped. shopping list
How to make it
- Boil 2 l water with 2 ts salt and the vinegar , add 2 bay leaves and the lobster(s), cook 15 min.
- Take lobster out, cool and cut in 4 pieces or more.
- Most recipes keep cooking water to cook pasta, but I don't !, I cook my pasta either in chicken broth or salted water.
- Heat olive oil and saute onion on low heat 5 min, add garlic and cook 5 min more, add celery and carot, cook another 5 min.
- Pour over with the cognac or brandy, add tomato+ paste, basilicum and 1 bay leave, add 2-3 c water and cook ca 30 min to thicken sauce.
- Add lobster(s) and cook 10 min more.
- Cook spagetti in 7-8 min al dente in 2 l chicken broth ( from cube).
- Drain pasta and add to sauce, mix well ( lobster pieces on top or aside) and top with parsley.
- Goes with warm brown bread ( baquette) to dip in sauce and white whine .
