Indonesian Fried Chicken in Soy Sauce Gravy

- 1 chicken, cut into small pieces shopping list
- 1 tbsp tamarind juice shopping list
- salt to taste shopping list
- oil for deep frying shopping list
- 4 cloves garlic, grind shopping list
- 1 tsp chopped ginger shopping list
- 1 tbsp margarine shopping list
- 7 shallots, finely sliced shopping list
- 5 tbsp sweet soy sauce shopping list
- 2 tomatoes, chopped coarsely shopping list
- 3 cm cinnamon stick shopping list
- 1/4 bruised nutmeg shopping list
- 2 cloves shopping list
- 1/2 tsp pepper shopping list
- 500 cc chicken stock shopping list
- 300 grams peeled potatoes, cut into 4-6 pieces then fried and drained shopping list
- 25 grams galss noodles, soaked in water till tender, cut into 10 cm lengths shopping list
- fried shallots shopping list
How to make it
- Rub chicken with tamarind juice and salt.
- Let it stand for 10 minutes, then deep-fry until golden brown.
- Heat margarine and saute shallots until soft, then add ground garlic and ginger, sweet soy sauce and chopped tomato. Saute untill fragrant. Add cinnamon, nutmeg, cloves, pepper and chicken stock, and bring to boil. When the gravy is boiling, add fried chicken. Simmer until the chicken is tender and the spices are absorbed.
- Add fried potatoes and glass noodles, and continue to cook a while.
- Garnish with fried shallots.
