Bacon Lobster Quiche Recipe
BACON LOBSTER QUICHE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Scully Estate in Fort Worth, Texas in 1997.

Ingredients
  • 9 inch pie crust unbaked
  • 4 slices bacon
  • 2 cups lobster meat
  • 1/4 cup scallions sliced
  • 1 cup Swiss cheese shredded
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon nutmeg

Directions
  1. Preheat oven to 375 then line a quiche or pine pan with pie crust.
  2. Cook bacon until crisp and set on paper towel to drain.
  3. Layer half of the lobster meat, scallions and Swiss cheese in pie crust.
  4. Repeat process for remaining half.
  5. Beat eggs then add milk, cream, salt, pepper and nutmeg and pour over lobster mixture.
  6. Crumble bacon into small pieces and sprinkle on top then bake 30 minutes.
