How to make it

  • In large skillet, heat oil. Add onion and saute until softened.
  • Add garlic and saute 1 minute.
  • Add wine and cook 1 minute.
  • Add diced tomatoes with liquid, olives, parsley, capers and red pepper flakes.
  • Bring mixture to a boil.
  • Add fish filets and salt.
  • Cover and cook over medium heat 8 to 9 minutes or until fish filets are opaque.
  • Serve with lemon wedges.
  • Can be served over a bed of cooked linguine if desired.
