CORNISH HEN WITH CRANBERRY BRANDY SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Weinberg Estate in Allen, Texas in 1987.

  • 1 Cornish game hen
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup apricot brandy
  • 1/2 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 1/2 cup honey
  • 1 tablespoon butter

Directions
  1. Preheat oven to 325.
  2. Wash hen and with a large sharp chef's knife cut through breastbone and open bird fully.
  3. Turn bird over and cut through back to split hen into two pieces.
  4. Wash bird well then season with salt and pepper.
  5. Place hen pieces in a baking pan large enough to hold pieces in one layer.
  6. Bake 45 minutes then remove from oven and cover with foil the set aside.
  7. In medium sauté pan over medium heat warm brandy and cranberries.
  8. Carefully light a match and flame brandy then when flame subsides add vinegar and honey.
  9. Cook stirring constantly until thickened then serve over hen.
