Ooops! I didn't put a temp haha. It will be at 350. ABSOLUTELY, I remove the skin and blobs of fat. However, I have to say, the skin locks in the moisture. But you can also cover the chicken with foil for about 15mins into preparing it to lock in some of that moisture.

You can do it either way. If you are marinaring, you mix the olive oil with the spices. However, if you just wanna dive into it, you put the olive oil after the spices :)
