German-Style Potato Salad

- 2 pounds red potatoes, cut into 1/8-inch-thick slices (about 5 cups) shopping list
- 8 bacon slices, cut into 1/2-inch pieces shopping list
- 1/3 cup cider vinegar shopping list
- 2 1/2 teaspoons sugar shopping list
- 3/4 teaspoon salt shopping list
- 1/4 teaspoon black pepper shopping list
- 1/2 cup finely chopped onion shopping list
- 1/4 cup finely chopped red bell pepper shopping list
- 1/4 cup finely chopped fresh parsley shopping list
How to make it
- Steam potatoes, covered, 10 minutes or until tender.
- Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings.
- Combine drippings, vinegar, sugar, salt, and black pepper in a large bowl; stir well with a whisk. Add the potatoes, onion, and bell pepper; toss gently to coat. Cover and let stand 1 hour, stirring occasionally. Add the bacon and parsley; toss gently.
