Chicken N Vegetables In Garlic Cream Sauce

- 4 whole chicken legs cut up into legs & thighs or 8 chicken pieces of your choice shopping list
- 2/3 cup all-purpose flour shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1/4 cup oil shopping list

- 6 medium sized red potatoes - cut into chunks Do not peel shopping list
- 250g (8oz) baby peeled carrots shopping list
- 1 large onion - cut into chunks shopping list
- 2 cans sliced mushrooms with the juice shopping list
- 1 can chicken broth shopping list
- 3/4 cup water shopping list
- 1 1/2 tsp pureed garlic - from a jar shopping list
- 2 tsp dried parsley shopping list

- 3/4 cup sour cream shopping list
- flour & water for thickening shopping list
How to make it
- Heat oil on med/high in an deep electric frying pan or deep large heavy skillet
- In a dish, mix together flour ,salt & pepper
- Dredge chicken in the flour mixture & place in pan in a single layer
- Fry on all sides until chicken is slightly golden - remove to a plate
- Discard oil.
- In the same pan place potatoes, carrots, onion, mushrooms, chicken broth, water, garlic & parsley
- Mix all together
- Place chicken pieces on top of vegatables
- Heat on med/high til almost to boil & then turn to low & cover with lid
- Simmer until chicken is cooked & vegatables are fork tender. About 45 mins. Turn vegetables once to insure even cooking
- Arrange chicken & vegetables in a large serving dish with a slotted spoon
- Turn up heat to med & stir the sour cream into the liquid in pan until well blended
- Mix together 2 Tblspn flour in 1/4 cup water to a thin paste
- Stir into pan to slightly thicken sauce
- Spoon sauce over chicken & vegetables & serve
