This is a mainstay at my house- I learnt to cook this when I was at school for my family, and now my kids cook it for our dinner. Super easy, and quick. Make some mashed potato to go under it, and you have a great, rich winter night's dinner....

Ingredients
  • 400g lean minced (ground) beef
  • 50g long grain rice
  • 1/4 cup chopped flat leaf parsley
  • 1/4 cup chopped fresh basil
  • 1 brown onion- chopped
  • 1 egg, whisked
  • 2 tbspns flour
  • olive oil spray
  • 1 800g can diced Italian tomatoes
  • 125ml water
  • mashed potato, to serve
  • shredded parmesan, to serve

Directions
  1. Combine beef, rice, herbs, onion and egg in a bowl. Add salt and pepper.
  2. Roll mince into walnut sized balls. Toss in flour to coat.
  3. Spray large non stick frying pan (heated over medium to high heat), and cook meatballs in batches for 2-3 mins, til browned.
  4. Reduce heat to medium to low, and add diced tomato, water and meatballs. Cook, covered for 12 mins.
  5. Remove cover and cook a further 5 mins or until rice is tender and sauce thickens slightly.
  6. Divide mashed potato among plates and top with meatballs and parmesan.
  7. Also great with leafy salad and crusty bread.......

These sound so good and when i go visit my friends i am going to make this served with garlic mashed potatos. they will love this and we will have fun in the kitchen preparing them. thanks
