How to make it

  • Preheat oven to modeate (180degC) or 160degC fan forced. Grease 2 oven trays
  • Caramel Filling:
  • Combine all ingredients in a small saucepan.
  • Stir over low heat til the mixture has thickened. Remove from heat
  • Cookies:
  • Beat butter and sugar in small bowl til light and fluffy
  • Stir in sifted flours and knead lightly til smooth
  • Roll heaped teaspoons of mixture into balls. Place 3 cm apart on tray
  • Flatten slightly, and then make an indent in the top of each with your thumb
  • Divide the caramel filling among the holes in the tops of the cookies
  • Bake for 15 mins or until browned slightly. Cool on tray
