Caramel Drop Cookies

- 125g butter shopping list
- 1/4 cup (55g) caster sugar shopping list
- 1 cup (150g) plain flour shopping list
- 2 tbspns cornflour shopping list
- caramel filling: shopping list
- 20g butter shopping list
- 3 tspns golden syrup or another heavy syrup-try maple! shopping list
- 1 tspn glucose syrup shopping list
- 2 tspns brown sugar shopping list
- 1/4 cups (85g) sweetened condensed milk shopping list
How to make it
- Preheat oven to modeate (180degC) or 160degC fan forced. Grease 2 oven trays
- Caramel Filling:
- Combine all ingredients in a small saucepan.
- Stir over low heat til the mixture has thickened. Remove from heat
- Cookies:
- Beat butter and sugar in small bowl til light and fluffy
- Stir in sifted flours and knead lightly til smooth
- Roll heaped teaspoons of mixture into balls. Place 3 cm apart on tray
- Flatten slightly, and then make an indent in the top of each with your thumb
- Divide the caramel filling among the holes in the tops of the cookies
- Bake for 15 mins or until browned slightly. Cool on tray
