One Egg Jam Cup Cakes

- 2/3 c. sugar shopping list
- 1/2 c. margarine shopping list
- 1/4 tsp. salt shopping list
- 1 tsp. vanilla shopping list
- 1/2 c. jam shopping list
- 1 tsp. nutmeg shopping list
- pecans may be added shopping list
- 1 egg shopping list
- 1 1/2 c. flour shopping list
- 1/2 c. milk shopping list
- 2 tsps. baking powder shopping list
- 1 tsp. cinnamon shopping list
- 1 tsp. allspice shopping list
How to make it
- Beat the egg, sugar, and margarine together, then add other ingredients.
- Mix well.
- Put by tablespoons in baking cups in a muffin tin and bake for about 15 to 20 minutes at 375.

- CARAMEL ICING FOR ABOVE:
- 1 c. brown sugar
- 1/3 c. milk
- 1/3 c. margarine
- 2 c. powdered sugar
- Combine the sugar and butter in a sauce pan, melt over low heat, then add the milk and let just come to slow boil.
- Remove from heat.
- Run the powdered sugar through a sieve and then add to the first mixture.
- Beat with a spoon until it stands in a peak.
- Ice cup cakes and decorate with a pecan.
