Who does not like shrimp. I have a son who is allergic and still eats it then runs to the er. Silly man! This is another newspaper recipe. I have found lots of these in the time I was off line!

Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons brown sugar
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1/2 teaspoon sea salt or regular salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon ground red pepper
  • 16 tail-on shrimp
  • 8 cherry tomatoes
  • 8 zucchini wedges
  • Lemon wedges

Directions
  1. Heat grill to medium-high heat.
  2. Combine the oil, brown sugar, basil, oregano, salt, black pepper, garlic powder, onion powder, and red pepper in a shallow bowl.
  3. Skewer the shrimp onto 4 skewers, alternating with tomatoes and zucchini.
  4. Brush the oil-herb mixture onto the shrimp and veggies.
  5. Grill until shrimp is pink on other side, about 3 minutes.
  6. Serve with lemon wedges.

  8. I confess I used summer squash instead of zucchini. I love summer squash, it hates me, so I got to go to the er, but it was worth it!!!
