Basque Lamb Chops With Tomatoes And Olives

- 6 lamb chops shopping list
- 1/4 cup flour shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 2 tablespoons spanish olive oil shopping list
- 1/3 cup dry white wine shopping list
- 1 pound vine ripened tomatoes peeled seeded and chopped shopping list
- 1/2 cup Spanish olives seeded and sliced shopping list
How to make it
- Season chops with salt and pepper then dredge with flour.
- Heat oil in heavy skillet until light haze forms then add chops and cook 6 minutes per side.
- Transfer to heated platter.
- Pour wine into skillet and scrape up brown bits then stir in tomatoes and olives.
- Cook over medium heat 5 minutes then season with salt and pepper and spoon over chops.
