Ingredients
  • 4 chicken thighs
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon freshly ground black pepper
  • 2 ounces bacon cubed
  • 1 medium white onion chopped
  • 4 cloves garlic coarsely chopped
  • 10 thai chilies
  • 5 plum tomatoes coarsely chopped
  • 1 cup dry white wine
  • 1/4 cup tequila
  • Juice of 1 lime
  • 3 ounces tomato paste
  • Feta cheese for topping
  • Chopped scallions for garnish

Directions
  1. Season thighs with black pepper then set frying pan over high heat and add vegetable oil.
  2. Fry things on both sides skin side first for 12 minutes per side.
  3. Set sauté pan over high heat then render bacon and cook until lightly browned.
  4. Add chopped onion and cook until lightly browned then reduce heat.
  5. Add garlic and cook 2 minutes then add chilies and cook 2 minutes longer.
  6. Add tomatoes and salt then cook 5 minutes.
  7. Add wine and tequila the simmer uncovered over medium heat for 15 minutes.
  8. Puree with a stick blender until very smooth then stir in tomato paste and lime juice.
  9. Transfer to ovenproof casserole then add chicken skin side up.
  10. Top with cheese and broil until cheese is lightly browned then garnish with scallions.
