Chicken In Tomato Sauce

- 4 chicken thighs shopping list
- 1 tablespoon vegetable oil shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 ounces bacon cubed shopping list
- 1 medium white onion chopped shopping list
- 4 cloves garlic coarsely chopped shopping list
- 10 thai chilies shopping list
- 5 plum tomatoes coarsely chopped shopping list
- 1 cup dry white wine shopping list
- 1/4 cup tequila shopping list
- juice of 1 lime shopping list
- 3 ounces tomato paste shopping list
- feta cheese for topping shopping list
- Chopped scallions for garnish shopping list
How to make it
- Season thighs with black pepper then set frying pan over high heat and add vegetable oil.
- Fry things on both sides skin side first for 12 minutes per side.
- Set sauté pan over high heat then render bacon and cook until lightly browned.
- Add chopped onion and cook until lightly browned then reduce heat.
- Add garlic and cook 2 minutes then add chilies and cook 2 minutes longer.
- Add tomatoes and salt then cook 5 minutes.
- Add wine and tequila the simmer uncovered over medium heat for 15 minutes.
- Puree with a stick blender until very smooth then stir in tomato paste and lime juice.
- Transfer to ovenproof casserole then add chicken skin side up.
- Top with cheese and broil until cheese is lightly browned then garnish with scallions.
