How to make it

  • Season thighs with black pepper then set frying pan over high heat and add vegetable oil.
  • Fry things on both sides skin side first for 12 minutes per side.
  • Set sauté pan over high heat then render bacon and cook until lightly browned.
  • Add chopped onion and cook until lightly browned then reduce heat.
  • Add garlic and cook 2 minutes then add chilies and cook 2 minutes longer.
  • Add tomatoes and salt then cook 5 minutes.
  • Add wine and tequila the simmer uncovered over medium heat for 15 minutes.
  • Puree with a stick blender until very smooth then stir in tomato paste and lime juice.
  • Transfer to ovenproof casserole then add chicken skin side up.
  • Top with cheese and broil until cheese is lightly browned then garnish with scallions.
