Ingredients
  • 2 T olive oil
  • 1/2 c sofritto
  • 1 chopped medium onion
  • 1/2 c seeded and chopped bell pepper
  • 2 medium seeded, peeled and chopped tomatoes
  • 2 c cooked black beens
  • 1 c chicken stock
  • 1 c long grained rice
  • 2 c waters
  • salt ans pepper to taste
  • Sofritto
  • 1/4 c green olives
  • 4 garlic cloves
  • 2 stalks celery
  • 1 T Worcestershire sauce
  • 1 T soy sauce
  • 1 T white vinegar
  • 1 c fresh cilantro
  • 1 T dried chicken base
  • cayenne pepper

Directions
  1. Make the sofritto first: place all ingrediants into a food processor and process until a watery paste
  2. Heat the oil in a large pot over medium heat.
  3. Add the sofritto; about 5 T at first and add to taste
  4. Add onion, green pepper and saute for 3-6 minutes
  5. Add tomatoes, black beans and chicken stock
  6. simmering for 6 minutes, stirring frequently until heated
  7. Add the rice and water,, cover and cook on low for 15 - 30 minutes until rice is done.. Add salt and pepper to taste,
