How to make it

  • Make the sofritto first: place oil, cilantro, bell peppers, onion and garlic into a food processor and process until a watery paste
  • Heat the oil in a large pot over medium heat.
  • Add the sofritto; about 5 T at first and add to taste
  • Add onion, green pepper and saute for 3-6 minutes
  • Add tomatoes, black beans and chicken stock
  • simmering for 6 minutes, stirring frequently until heated
  • Add the rice and water, cover and cook on low for 15 - 30 minutes until rice is done.. Add salt and pepper to taste,
