Chickpea Flaxseed And Oatmeal Burgers With Tzatziki

- 1/2 medium cucumber, peeled, seeded, grated, and squeezed dry shopping list
- 1/4 cup fat-free plain yogurt shopping list
- 1/2 teaspoon minced garlic shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- BURGERS: shopping list
- 6 tablespoons flaxseed shopping list
- 1 can (15 1/2 ounces) chickpeas, rinsed and drained shopping list
- 1/4 cup rolled oats shopping list
- 2 cloves garlic shopping list
- 2 tablespoons water shopping list
- 1/4 cup chopped fresh mint shopping list
- 2 tablespoons lemon juice shopping list
- 2 teaspoons ground cumin shopping list
- 1 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 1/4 cup panko bread crumbs shopping list
- 1 egg, lightly beaten shopping list
- 1 tablespoon olive oil shopping list
- 4 whole wheat hamburger buns shopping list
- 1 medium tomato, cut into 8 slices shopping list
- 1/2 cup alfalfa sprouts shopping list
How to make it
- 1. To make the tzatziki: In a small bowl, combine the cucumber, yogurt, garlic, salt, and pepper. Cover and refrigerate while preparing the burgers. 2. To make the burgers: In a spice or coffee grinder, process 5 tablespoons of the flaxseed to a fine meal. In the bowl of a food processor, combine the chickpeas, oats, garlic, and water. Pulse until the mixture is coarsely chopped. Add the mint, lemon juice, cumin, salt, pepper, and flaxseed meal. 3. Pulse the food processor until the mixture is just combined. Divide the mixture into 4 equal portions and shape each into a 1/2"-thick patty. 4. Combine the bread crumbs and remaining flaxseed on a plate. Dip the burgers in the egg, then dredge in the bread crumb mixture. 5. In a large nonstick skillet, heat the oil over medium-high heat. Add the burgers and cook for 5 to 6 minutes per side, or until golden. 6. On the bottom of each bun, place 2 tomato slices and 2 tablespoons alfalfa sprouts. Place the burgers on top of the sprouts and top each burger with a slightly rounded tablespoon of the tzatziki.
