Chocolate Peanut Butter Pie Recipe

Ingredients

1 cup confectioners’ sugar

1/4 cup peanut butter

1 9 inch pie shell, baked

Chocolate chips

Chocolate filling:

1 cup sugar

1/3 cup flour

2 tbsp cocoa

1/4 tsp salt

2 cups milk

3 egg yolks, beaten

2 tbsp butter

1 tsp vanilla

Directions

Combine confectioners’ sugar with peanut butter, mix until crumbly. Pat in bottom of baked pie shell reserving a small amount for garnish. Pour chocolate filling over peanut butter mixture. When completely cooled, top with whipped cream. Garnish with remaining peanut butter mixture and chocolate chips.

Chocolate filling: In heavy saucepan, combine sugar, flour, salt and cocoa. Slowly add milk. Cook over medium heat until thickened and bubbly. Reduce heat. Cook and stir 2 minutes (longer if needed). Beat egg yolks slightly. Gradually stir 1 cup of the hot mixture into egg yolks. Return egg mixture to saucepan. Bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in butter and vanilla.
