Alligator In Hot Sauce Recipe
This spicy Cajun dish is really good served over hot cooked rice. Cook this up, serve with an ice cold beer while you listen to "Jolie Blon".

Ingredients
  • 2 1/2 pounds alligator meat, cubed and floured
  • 3 cups cotton seed oil
  • 3 cups white onions, diced
  • 1 cup celery, diced
  • 1/2 cup green bell pepper, diced
  • 1 pound butter
  • 1 tablespoon garlic powder
  • salt and pepper, to taste
  • 1 1/2 cups tomato sauce
  • 1 quart water
  • 1/2 teaspoon paprika
  • Tabasco sauce, to taste
  • 1/2 teaspoon cayenne pepper, or to taste
  • hot cooked rice

Directions
  1. Soak alligator meat in water for about 10 minutes.
  2. Sauté vegetables in butter and garlic powder.
  3. Add salt and pepper.
  4. Add tomato sauce, water, and paprika and bring to a boil.
  5. Reduce heat and simmer on medium heat 15 minutes.
  6. Coat alligator meat in flour and fry in cotton seed oil at 350*F. for 3 or 4 minutes.
  7. Remove alligator meat from pan and drain slightly.
  8. Season alligator meat to taste with Tabasco and cayenne.
  9. Add alligator meat to vegetables, stir, and serve over rice.

My brother in law would love this dish. I bet you could substitute chicken for the alligator for those who don't care for gator or can't find it. great recipe!
