How to make it

  • Soak alligator meat in water for about 10 minutes.
  • Sauté vegetables in butter and garlic powder.
  • Add salt and pepper.
  • Add tomato sauce, water, and paprika and bring to a boil.
  • Reduce heat and simmer on medium heat 15 minutes.
  • Coat alligator meat in flour and fry in cotton seed oil at 350*F. for 3 or 4 minutes.
  • Remove alligator meat from pan and drain slightly.
  • Season alligator meat to taste with Tabasco and cayenne.
  • Add alligator meat to vegetables, stir, and serve over rice.

    My brother in law would love this dish. I bet you could substitute chicken for the alligator for those who don't care for gator or can't find it. great recipe!
