Alligator in Hot Sauce

- 2 1/2 pounds alligator meat, cubed and floured shopping list
- 3 cups cotton seed oil shopping list
- 3 cups white onions, diced shopping list
- 1 cup celery, diced shopping list
- 1/2 cup green bell pepper, diced shopping list
- 1 pound butter shopping list
- 1 tablespoon garlic powder shopping list
- salt and pepper, to taste shopping list
- 1 1/2 cups tomato sauce shopping list
- 1 quart water shopping list
- 1/2 teaspoon paprika shopping list
- Tabasco sauce, to taste shopping list
- 1/2 teaspoon cayenne pepper, or to taste shopping list
- hot cooked rice shopping list
How to make it
- Soak alligator meat in water for about 10 minutes.
- Sauté vegetables in butter and garlic powder.
- Add salt and pepper.
- Add tomato sauce, water, and paprika and bring to a boil.
- Reduce heat and simmer on medium heat 15 minutes.
- Coat alligator meat in flour and fry in cotton seed oil at 350*F. for 3 or 4 minutes.
- Remove alligator meat from pan and drain slightly.
- Season alligator meat to taste with Tabasco and cayenne.
- Add alligator meat to vegetables, stir, and serve over rice.

My brother in law would love this dish. I bet you could substitute chicken for the alligator for those who don't care for gator or can't find it. great recipe!
