White Sauce - Thin Medium Thick Recipe
Many recipes, especially soups and casseroles, are based on a white sauce. Here is three kinds of white sauces and gravy.

  • Thin (1 cup) For soups and creamed vegetables:
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • Medium (1 cup) For salloped and creamed dishes:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • Thick (1cup) casseroles and souffles:
  • 3 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • No-milk gravy: Substitute broth of choice for milk.

Directions
  1. 1. Melt the butter in a saucepanon medium heat.
  2. 2. Stir in flour with a whisk. Allow to cook for a few minutes.
  3. 3. Slowly whisk in milk and stir constantly until thickens and bubbles.
  4. 4. Any cheeses should be added at this time.

Have you ever tried making white sauce in the microwave? Very easy and less time stirring constantly. You melt the butter in microwave then add the flour and stir together and nuke for 1 minute then add the salt and milk and nuke for 30 sec, stir, nuke for another 30 sec stir again. Continue this for about 3 minutes till thickened and yummy and ready to add to whatever you are making. I have been doing it this way for years as I never have patience to stand and stir constantly LOL.
