New Potatoes With Coriander Seeds and Wine

- 3 pounds waxy new potatoes shopping list
- 1/3 cup olive oil shopping list
- 1 tablespoon coriander seeds coarsely crushed shopping list
- 1/2 teaspoon salt shopping list
- 2/3 cup sweet red wine shopping list
- 2/3 cup dry white wine shopping list
- 3 tablespoons chopped fresh cilantro shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Soak potatoes in cold water for 15 minutes then scrub well to clean and remove most of the skin.
- Dry with paper towels.
- In large deep skillet with a lid heat oil.
- Add only as many potatoes as will fit in a single layer without crowding.
- Cover and cook over medium 10 minutes then turn potatoes then recover and cook 6 minutes.
- With a slotted spoon transfer potatoes to a plate and cook the next batch then set skillet aside.
- Place each potato on a cutting board and press with side of a large knife just until potato cracks.
- Return all potatoes to the skillet then set over high heat and add coriander seeds and salt.
- When potatoes begin to sizzle add wine but be careful because it will bubble vigorously.
- Cover then reduce heat to medium and cook three minutes more.
- Toss or stir well then reduce heat to low and cover and simmer 12 minutes more.
- Add cilantro and pepper then serve immediately.
