How to make it

  • Soak potatoes in cold water for 15 minutes then scrub well to clean and remove most of the skin.
  • Dry with paper towels.
  • In large deep skillet with a lid heat oil.
  • Add only as many potatoes as will fit in a single layer without crowding.
  • Cover and cook over medium 10 minutes then turn potatoes then recover and cook 6 minutes.
  • With a slotted spoon transfer potatoes to a plate and cook the next batch then set skillet aside.
  • Place each potato on a cutting board and press with side of a large knife just until potato cracks.
  • Return all potatoes to the skillet then set over high heat and add coriander seeds and salt.
  • When potatoes begin to sizzle add wine but be careful because it will bubble vigorously.
  • Cover then reduce heat to medium and cook three minutes more.
  • Toss or stir well then reduce heat to low and cover and simmer 12 minutes more.
  • Add cilantro and pepper then serve immediately.
