Cornish Hens With Cranberry Brandy Sauce Recipe

Ingredients
  • 1 Cornish game hen thawed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup apricot brandy
  • 1/2 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 1/2 cup honey
  • 1 tablespoon butter

Directions
  1. Preheat oven to 325 and with large knife cut through breast bone and open bird fully.
  2. Turn bird over and cut through back to split hen into two pieces.
  3. Wash bird well then season with salt and pepper.
  4. Place hen pieces in baking pan large enough to hold pieces in one layer then bake 45 minutes.
  5. Remove from oven then cover with foil and set aside.
  6. In medium sauté pan over medium heat warm brandy and cranberries.
  7. Carefully light a match and flame brandy.
  8. When flame subsides add balsamic vinegar and honey then cook stirring until thickened.
  9. Serve over hens.
