EAST AFRICAN- BANANA JAM

- 1-3/4 cups sugar shopping list
- 1/2 -cup lemon juice shopping list
- 1- tablespoon lemon zest, shopping list
- 1/2- cup fresh lemon juice , strained shopping list
- 6-7 ripe bananas shopping list
- need wide neck funnel, canning jar with lid ...and a heavy pan shopping list
- and thermometer ..............(use one large jar or 2 small ones) shopping list
How to make it
- put the sugar, lemon juice and zest into a large bowl and stir until the sugar has almost dissolved.
- peel and slice the bananas, add them to the lemon mixture and gently stir until they are well coated..
- cover the bowl with plastic wrap and leave to marinate for 1 hour
- scrape the banana mixture into the preserving pan and place the sugar thermometer inside.
- place the pan over a low heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
- boil until the sugar thermometer reaches the jam stage 220 degrees f. it will be a lovely amber color.............
- meanwhile sterlize the jar by bringing a large saucepan of water to a boil...
- when the water is boiling , immerse the jar in the water for 1 minute, then remove with tongs and allow it to drain and steam by it self dry...
- place the funnel in the jar and carefully spoon in the banana jam , filling it right to the top, then cover and store it in refrigerator for up to 1 month.............
- makes 2 cups.....................
