How to make it

  • Mix sugar, tapioca and salt. Separately; mix pineapple, lemon peel and lemon juice. Combine two mixtures. Let stand
  • 15 minutes. Turn mixture into 9 inch pie shell. Dot with butter. Place top crust with slits. Bake at 425 degrees approximately 45 minutes.

    The pie turned out great, with a strong flavor of fresh pineapple. I had a mango hangin' around the kitchen, so I peeled and chopped it up and tossed it in with the pineapple. Yum!! Very good recipe--thanks! Chris
