Chicken And Mushroom Saute Recipe

Ingredients
  • 4 tablespoons olive oil divided
  • 1/4 cup minced shallots
  • 8 ounces mushrooms sliced
  • 1 red bell pepper diced
  • 1 small zucchini quartered and sliced
  • 2 teaspoons dried thyme divided
  • 4 whole boneless skinless chicken breasts cut into sixths
  • 1 tablespoon balsamic vinegar
  • 3/4 cup chopped sun dried tomatoes marinated in oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Heat 2 tablespoons oil in a large skillet.
  2. Add shallots and mushrooms and saute 2 minutes.
  3. Add bell pepper, zucchini and 1 teaspoon thyme then saute 2 more minutes.
  4. Remove from skillet and keep warm then add remaining oil to skillet.
  5. Add chicken and remaining thyme then sauté 15 minutes.
  6. Remove chicken from skillet and combine with vegetables.
  7. To juices in skillet add vinegar then cook 1 minute stirring up any browned particles on bottom.
  8. Return chicken and vegetables to pan along with the sun dried tomatoes.
  9. Toss together two minutes to blend flavors then season with salt and pepper and serve.
