How to make it

  • Heat 2 tablespoons oil in a large skillet.
  • Add shallots and mushrooms and saute 2 minutes.
  • Add bell pepper, zucchini and 1 teaspoon thyme then saute 2 more minutes.
  • Remove from skillet and keep warm then add remaining oil to skillet.
  • Add chicken and remaining thyme then sauté 15 minutes.
  • Remove chicken from skillet and combine with vegetables.
  • To juices in skillet add vinegar then cook 1 minute stirring up any browned particles on bottom.
  • Return chicken and vegetables to pan along with the sun dried tomatoes.
  • Toss together two minutes to blend flavors then season with salt and pepper and serve.
