Chicken and Mushroom Saute

- 4 tablespoons olive oil divided shopping list
- 1/4 cup minced shallots shopping list
- 8 ounces mushrooms sliced shopping list
- 1 red bell pepper diced shopping list
- 1 small zucchini quartered and sliced shopping list
- 2 teaspoons dried thyme divided shopping list
- 4 whole boneless skinless chicken breasts cut into sixths shopping list
- 1 tablespoon balsamic vinegar shopping list
- 3/4 cup chopped sun dried tomatoes marinated in oil shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Heat 2 tablespoons oil in a large skillet.
- Add shallots and mushrooms and saute 2 minutes.
- Add bell pepper, zucchini and 1 teaspoon thyme then saute 2 more minutes.
- Remove from skillet and keep warm then add remaining oil to skillet.
- Add chicken and remaining thyme then sauté 15 minutes.
- Remove chicken from skillet and combine with vegetables.
- To juices in skillet add vinegar then cook 1 minute stirring up any browned particles on bottom.
- Return chicken and vegetables to pan along with the sun dried tomatoes.
- Toss together two minutes to blend flavors then season with salt and pepper and serve.
