Takoyaki - Octopus Balls

- **for the Dashi** (or dashi substitute for purists...) shopping list
- 2 1/4 cups water shopping list
- (1) [Knorr brand] fish bouillon cube shopping list

- 1 cup fresh Octopus (tighly packed) [if using frozen, estimate about half a 24oz pack] use more if you want it chunkier shopping list
- 1lg or 2sm green onions shopping list
- 1 1/2 tbsp Kizami Shoga (this is a Red pickled ginger) shopping list
- sea salt (or kosher salt) shopping list
- ground black pepper shopping list
- 1tbsp Aji-mirin (rice wine) shopping list
- 1 tsp sesame seed oil shopping list
- 1 tsp olive oil shopping list

- **for the breading** shopping list
- 2 cups flour (maybe a little more) shopping list
- 2 eggs shopping list
- 2 cups dashi shopping list
- *** shopping list
- **when frying** shopping list
- a large-ish Spoon or small Ladle shopping list
- 2 bamboo skewers shopping list
- 1 Takoyaki Pan shopping list
- Spray Grease (like Pam) to start shopping list
How to make it
- Put 2 1/4 cups water into a microwave-safe container and then into the Microwave on High for 3 minutes. (the excess will boil off)
- Take your now REALLY HOT water out and put in the Fish Bouillon Cube. Tease it as necessary to make it dissolve completely.
- Place your Octopus in another microwave-safe bowl with enough water to cover it along with 1 tsp Olive Oil and 1 tsp Sea Salt.
- Cook that in the Microwave for 6 minutes on High.
- Wash and chop up your Green Onions. Drain and chop up your Shoga.
- Drain and let cool slightly your Octopus. When cool, chop into small pieces 1/2 to 1/4 inches long.
- Heat up your Pan on Med High - High heat.
- Stir in your wet ingredients (Eggs, Dashi, Mirin, Oil) to the flour then everything else. The consistency will be similar to pancake batter. Kinda watery with no clumps of flour.
- Everyone seems to find their own technique on turning the batter into balls. It's difficult, at best, to create perfect spheres. I only sprayed down my pan for the first batch and it did fine for the rest without re-application.
